Description

These Zucchini Garlic Bites are a delicious and healthy appetizer featuring grated zucchini mixed with Parmesan, garlic, and herbs, then baked to golden perfection. Crispy on the outside and tender inside, they are perfect for snacking or serving with your favorite dipping sauce.

Ingredients

Scale

Main Ingredients

  • 2 medium zucchini, grated and excess moisture squeezed out
  • 1 teaspoon salt
  • 1 large egg
  • 1 cup Italian-style breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 3 cloves garlic, minced
  • 2 tablespoons fresh parsley, finely chopped
  • 2 tablespoons olive oil
  • 1/4 teaspoon black pepper

Instructions

  1. Prepare Zucchini: Preheat the oven to 400°F and line a baking sheet with parchment paper. Place the grated zucchini in a bowl, sprinkle with salt, and let it sit for 10 minutes to draw out moisture. Then squeeze out as much liquid as possible using a clean cloth or paper towels.
  2. Mix Ingredients: Add the egg, Italian-style breadcrumbs, grated Parmesan cheese, minced garlic, chopped parsley, olive oil, and black pepper to the drained zucchini. Mix thoroughly until all ingredients are well combined and form a cohesive mixture.
  3. Form Bites: Scoop tablespoon-sized portions of the mixture and shape them into small bite-sized mounds. Arrange them evenly on the prepared baking sheet, leaving space between each bite.
  4. Bake: Bake in the preheated oven for 18 to 22 minutes, turning the bites once halfway through the cooking time to ensure even crisping. Bake until the bites are golden brown and crisp on the outside.
  5. Serve: Remove from the oven and allow the bites to cool slightly before serving. Enjoy with marinara sauce, garlic aioli, or ranch dressing for dipping.

Notes

  • Serve with marinara sauce, garlic aioli, or ranch dressing for dipping.
  • For extra crispiness, lightly spray the tops with cooking spray before baking.
  • These bites can also be cooked in an air fryer at 375°F for about 12 minutes for a quicker alternative.
