Whipped Feta

- ¼ cup cream cheese, softened
- 2 tablespoons Greek yogurt or sour cream
- 1 tablespoon olive oil
- 1 tablespoon lemon juice
- 1 small garlic clove, minced
- Black pepper to taste
Roasted Olives
- 1 cup mixed olives (green and kalamata, pitted)
- 1 tablespoon olive oil
- ½ teaspoon dried oregano
- ½ teaspoon chili flakes (optional)
- Zest of ½ lemon
Instructions
- Preheat and roast olives: Preheat your oven to 400°F (200°C). In a small baking dish, toss the mixed olives with olive oil, dried oregano, chili flakes if using, and lemon zest. Roast the olives for 15–20 minutes until they are fragrant and slightly wrinkled. Remove from the oven and let them cool slightly.
- Prepare whipped feta: While the olives roast, place the feta cheese, softened cream cheese, Greek yogurt or sour cream, olive oil, lemon juice, and minced garlic in a food processor. Blend until the mixture is smooth and creamy, stopping to scrape down the sides as needed. Season with black pepper to taste.
- Assemble the dip: Spread the whipped feta mixture into a shallow serving bowl or plate, using the back of a spoon to create decorative swirls. Spoon the warm roasted olives evenly over the top of the whipped feta.
- Garnish and serve: Drizzle a little extra olive oil over the dip if desired, and garnish with fresh herbs such as thyme or parsley. Serve immediately with warm pita, toasted baguette slices, or fresh vegetables for dipping.
