Ingredients
Scale
Spring Rolls
- 10 rice paper wrappers
- 1 cup carrots, julienned
- 1 cup cucumber, julienned
- 1 cup red bell pepper, julienned
- 1 avocado, sliced
- 1/2 cup fresh mint leaves
- 1/2 cup fresh cilantro
Peanut Sauce
- 1/2 cup peanut butter
- 2 tablespoons soy sauce
- 2 tablespoons lime juice
- 1 tablespoon honey or agave syrup
- Warm water, as needed for dipping rice paper wrappers
Instructions
- Prepare Vegetables: Thoroughly wash all vegetables and herbs. Cut carrots, cucumber, and red bell pepper into thin, julienned strips for easy rolling and a pleasant texture.
- Make Peanut Sauce: In a medium bowl, combine peanut butter, soy sauce, lime juice, and honey or agave syrup. Stir until smooth and set aside for serving.
- Soften Rice Paper: Fill a shallow dish with warm water. Dip one rice paper wrapper into the water for 10-15 seconds until it softens but remains pliable.
- Assemble Rolls: Lay the softened wrapper flat on a clean surface. Place a small amount of each vegetable, avocado slices, and herbs in the center of the wrapper.
- Roll Spring Rolls: Fold the sides of the rice paper over the filling, then roll tightly from bottom to top to secure the contents inside.
- Repeat Process: Repeat steps 3 to 5 with remaining wrappers and filling until all spring rolls are assembled.
- Serve: Arrange the spring rolls on a serving platter and serve alongside the peanut sauce for dipping.
Notes
- Use warm water to soften rice paper wrappers for easier handling and better texture.
- Feel free to customize the filling with your favorite vegetables or add tofu for protein.
- Peanut sauce can be made ahead and refrigerated; stir well before serving.
- Serve immediately after assembling for the freshest taste and best texture, as rice papers can become sticky over time.
