Description

These fresh Vegetable Spring Rolls with a delicious homemade Peanut Sauce are a light and healthy appetizer that packs a flavorful punch. Featuring crisp julienned vegetables and creamy avocado wrapped in tender rice paper, they make a perfect snack or starter that’s easy to prepare and sure to impress.

Ingredients

Scale

Spring Rolls

  • 10 rice paper wrappers
  • 1 cup carrots, julienned
  • 1 cup cucumber, julienned
  • 1 cup red bell pepper, julienned
  • 1 avocado, sliced
  • 1/2 cup fresh mint leaves
  • 1/2 cup fresh cilantro

Peanut Sauce

  • 1/2 cup peanut butter
  • 2 tablespoons soy sauce
  • 2 tablespoons lime juice
  • 1 tablespoon honey or agave syrup
  • Warm water, as needed for dipping rice paper wrappers

Instructions

  1. Prepare Vegetables: Thoroughly wash all vegetables and herbs. Cut carrots, cucumber, and red bell pepper into thin, julienned strips for easy rolling and a pleasant texture.
  2. Make Peanut Sauce: In a medium bowl, combine peanut butter, soy sauce, lime juice, and honey or agave syrup. Stir until smooth and set aside for serving.
  3. Soften Rice Paper: Fill a shallow dish with warm water. Dip one rice paper wrapper into the water for 10-15 seconds until it softens but remains pliable.
  4. Assemble Rolls: Lay the softened wrapper flat on a clean surface. Place a small amount of each vegetable, avocado slices, and herbs in the center of the wrapper.
  5. Roll Spring Rolls: Fold the sides of the rice paper over the filling, then roll tightly from bottom to top to secure the contents inside.
  6. Repeat Process: Repeat steps 3 to 5 with remaining wrappers and filling until all spring rolls are assembled.
  7. Serve: Arrange the spring rolls on a serving platter and serve alongside the peanut sauce for dipping.

Notes

  • Use warm water to soften rice paper wrappers for easier handling and better texture.
  • Feel free to customize the filling with your favorite vegetables or add tofu for protein.
  • Peanut sauce can be made ahead and refrigerated; stir well before serving.
  • Serve immediately after assembling for the freshest taste and best texture, as rice papers can become sticky over time.
