Instructions

  1. Prepare the cookie cups: Gently press soft sugar cookies into a mini muffin tin or silicone mold to form small cup shapes. Be careful to avoid cracking the cookies as they will serve as the crisp, sweet shells to hold the filling.
  2. Make the mascarpone cream filling: In a clean bowl, whip the heavy cream and powdered sugar together until soft peaks form. In a separate bowl, mix mascarpone cheese, vanilla extract, espresso or strong coffee, and optional coffee liqueur or Marsala wine.
