Tuna Salad
- 2 (5oz) cans of tuna, drained
- 1 medium onion, chopped
- 1/2 stalk of celery, chopped
- 1 garlic clove, minced
- 1 tablespoon fresh parsley, chopped
- 3-4 tablespoons mayonnaise
- 2 tablespoons extra virgin olive oil (divided use)
- 1/3 cup shredded mozzarella cheese
- Salt and pepper, to taste

- Bread slices (your choice)
- Butter, softened (for spreading)
- 1 tablespoon extra virgin olive oil (for cooking)
Instructions
- Prepare the Tuna Salad: Drain the water from the tuna cans and place the tuna in a medium bowl. Add the chopped onion, celery, garlic, parsley, mayonnaise, 2 tablespoons of olive oil, and shredded mozzarella cheese. Mix everything until well combined. Season with salt and pepper to taste.
- Heat the Skillet: Heat a non-stick skillet over medium heat and add 1 tablespoon of extra virgin olive oil to coat the surface.
- Assemble the Sandwich: Spread softened butter on one side of each bread slice. Place one slice, butter-side down, onto the skillet. Then scoop about 2 tablespoons of the tuna salad mixture onto the bread in the skillet. Butter another slice of bread on one side and place it butter-side up on top of the tuna salad.
- Grill the Sandwich Bottom Side: Let the bottom slice toast until it turns golden brown and crispy, about 2-3 minutes.
- Flip and Grill Other Side: Carefully flip the sandwich using a spatula and grill the other side until it is golden and crispy, approximately another 2-3 minutes, allowing the cheese to melt thoroughly.
- Serve: Remove the sandwich from the skillet, let it rest for a minute to set, then slice and serve hot.
