Instructions

  1. Preheat the Oven: Preheat your oven to 400ºF. Lightly spray an 8×8-inch baking dish with cooking spray to prevent sticking and ensure easy cleanup.
  2. Cook the Beef: In a large skillet over medium heat, cook the ground beef until it is no longer pink. Drain excess fat from the skillet. Stir in the water and taco seasoning mix. Allow the mixture to simmer for 5 minutes to develop flavor. Then, mix in ½ cup of shredded cheddar cheese, the undrained Rotel tomatoes and green chiles, and the drained black beans. Pour this mixture evenly into the prepared baking dish.
  3. Prepare Cornbread Batter: Follow the package directions to prepare the cornbread mix, typically combining the Jiffy corn bread mix with egg, milk, and melted butter or oil. Once mixed, spread the batter evenly over the beef mixture in the baking dish.
