Instructions
- Preheat and Prepare: Preheat your oven to 350°F (175°C) and lightly grease a 12-cup muffin tin to prevent sticking.
- Make the Cookie Dough: In a large bowl, cream together 1 cup of softened butter and granulated sugar until light and fluffy. Beat in the egg and 1 1/2 teaspoons vanilla extract until fully combined.
- Combine Dry Ingredients: In a separate bowl, whisk together the all-purpose flour, baking powder, and salt to evenly distribute the leavening and seasoning.
- Mix Dough: Gradually add the dry ingredients to the wet ingredients, mixing until a soft dough forms. Be careful not to overmix.
- Shape and Fill Muffin Tin: Roll the dough into 1.5-inch balls, place each ball into a muffin cup, and use your thumb or the back of a spoon to press down the center slightly, creating a shallow well.
- Bake: Bake the cookie cups for 12–14 minutes or until the edges turn lightly golden, indicating doneness.
- Form the Wells: Remove the tin from the oven and immediately press down the centers again with a spoon or small cup to deepen the wells while the cookies are still warm.
- Cool: Allow the cookie cups to cool completely in the pan so they firm up without losing shape, then gently remove them from the muffin tin.
- Make the Frosting: Beat together 1/2 cup softened butter and cream cheese until smooth. Slowly add powdered sugar and vanilla extract while mixing until creamy and smooth. Adjust consistency by adding 1–2 tablespoons of milk as needed.
- Decorate: Tint the frosting with food coloring if desired, then pipe or spoon the frosting into each cooled cookie cup. Top with sprinkles for a festive finish.
