Description

Strawberry Chex Mix is a delightful and festive sweet snack perfect for parties or holiday treats. This crunchy cereal mix is coated with a creamy strawberry-flavored white chocolate, dusted with powdered sugar and freeze-dried strawberry powder, and accented with colorful Valentine’s Day M&Ms and sprinkles. Easy to make and wonderfully flavorful, it’s a fun twist on traditional Chex Mix that combines sweet, fruity, and crunchy textures in every bite.

Ingredients

Scale

Main Ingredients

  • 6 cups rice Chex cereal
  • 12 oz white chocolate chips or melting wafers
  • 1 cup freeze-dried strawberries
  • 1 cup powdered sugar
  • â…” cup red or pink/Valentine M&Ms
  • 2 Tbsp red, pink, and white sprinkles

Optional Add-ins

  • Mini pretzels
  • Crushed Golden Oreos
  • Mini marshmallows
  • Additional white chocolate chips

Instructions

  1. Add Cereal: Place 6 cups of rice Chex cereal into a large mixing bowl, ensuring the bowl is big enough to allow for stirring and coating later on.
  2. Make Strawberry Powder: Using a food processor, pulse 1 cup of freeze-dried strawberries until you get a fine powder. Tiny seeds may remain, which is normal. Alternatively, you can crush them manually with a plastic bag and spoon, but it takes more effort.
  3. Melt White Chocolate: In a microwave-safe bowl, melt 12 oz of white chocolate chips or melting wafers in 20-second increments, stirring after each interval. When almost fully melted, stop microwaving and stir continuously until the warm chocolate is completely smooth to avoid burning it.
  4. Flavor White Chocolate: Stir 2 tablespoons of the strawberry powder into the melted white chocolate until fully combined, giving the chocolate a delicious strawberry flavor and pink tint.
  5. Coat Cereal: Pour the strawberry white chocolate mixture over the Chex cereal. Gently fold and stir to coat all the cereal pieces evenly without breaking them.
  6. Powder Coating: In a large resealable plastic bag, add 1 cup of powdered sugar plus the remaining strawberry powder. Transfer the chocolate-coated cereal mixture into the bag and seal tightly. Shake vigorously to evenly coat the cereal pieces in the powdered sugar and strawberry mixture.
  7. Cool and Add Mix-ins: Spread the coated Chex mix onto a parchment-lined baking sheet or place back into a bowl to cool completely. Once cooled, stir in â…” cup of red or pink/Valentine M&Ms, 2 tablespoons of red, pink, and white sprinkles, and any optional add-ins like mini pretzels or marshmallows. Serve and enjoy!

Notes

  • Be careful not to overheat the white chocolate when melting to prevent it from seizing.
  • Freeze-dried strawberries can be purchased online or at specialty stores.
  • The optional add-ins add extra texture and flavor but are not required.
  • Store the mix in an airtight container at room temperature for up to one week to maintain freshness.
  • For a smoother strawberry powder, a food processor or spice grinder works best.
