Instructions

  1. Prepare the Cake: Follow the package instructions for the white cake mix, including the required additional ingredients (usually eggs, oil, and water). Divide the batter evenly between two 8-inch or 9-inch round cake pans. Bake as directed until a toothpick inserted into the center comes out clean. Allow the cakes to cool completely in the pans before removing.
  2. Make the Pudding Mixture: In a large bowl, whisk together the instant vanilla pudding mix and cold milk vigorously until the mixture thickens, about 2 minutes. This will form the base of the creamy filling.
  3. Whip the Cream: In a separate chilled bowl, whip the heavy whipping cream with powdered sugar and vanilla extract until soft peaks form. Be careful not to overwhip, as you want the cream to remain light and fluffy.
  4. Create the Cloud Filling: Gently fold the whipped cream into the thickened pudding mixture using a spatula, combining them without deflating the whipped cream. This will create the light and airy ‘cloud’ texture for the filling.
  5. Assemble the Cake: Place one cake layer on a serving plate. Spread half of the cloud filling evenly over the top. Arrange a layer of sliced strawberries over the cream. Place the second cake layer on top and repeat with the remaining cloud filling and sliced strawberries.
