  • ½ cup feta cheese, crumbled

  • ¼ tsp black pepper
  • Pinch of salt (optional, as feta is salty)

Puff Pastry & Finishing

  • 1 sheet puff pastry, thawed if frozen
  • 1 egg, beaten (for egg wash)
  • Coarse sea salt, for sprinkling (optional)


Instructions

  1. Prepare the Filling: In a mixing bowl, combine the chopped and lightly sautéed spinach with crumbled feta cheese, softened cream cheese, minced garlic, dried oregano, black pepper, and a small pinch of salt if needed. Stir thoroughly until the mixture is creamy and evenly blended.
  2. Preheat Oven and Prepare Pastry: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper to prevent sticking. On a clean surface, slightly roll the puff pastry sheet to smooth it out and create an even thickness.
  3. Assemble and Cut Twists: Spread the spinach and feta filling evenly over half of the puff pastry sheet. Fold the other half over the filling to cover it completely. Using a sharp knife, cut the folded pastry into approximately 1-inch wide strips. Carefully twist each strip several times to form spiral shapes.
  4. Egg Wash and Bake: Arrange the twisted strips on the prepared baking sheet, leaving space between each twist. Brush each twist generously with the beaten egg wash to promote browning and shine. Optionally, sprinkle coarse sea salt on top. Bake in the preheated oven for 18 to 22 minutes, until the twists are puffed up, golden brown, and cooked through.
