Instructions

  1. Preheat Oven: Preheat your oven to 375°F (190°C). Generously grease a 12-cup muffin pan with cooking spray or butter and set it aside to prepare for baking.
  2. Prepare Spinach: Fully thaw the frozen chopped spinach and then squeeze out as much liquid as possible using a clean kitchen towel or paper towels to prevent sogginess in the filling.
  3. Sauté Vegetables: Heat butter in a large saucepan over medium-high heat until melted and bubbly. Add diced onion, minced garlic, and the squeezed spinach. Sauté the mixture for about 3-5 minutes until most of the moisture has evaporated, then remove from heat and allow it to cool for 5 minutes.
  4. Mix Filling: In a large mixing bowl, combine the cooled spinach mixture with chopped parsley, crumbled feta cheese, grated Parmesan, one egg, salt, and ground black pepper.
