Description

This Spinach Feta Casserole is a delicious and protein-packed dish perfect for breakfast, brunch, or a light dinner. Featuring sautéed onions and spinach blended with eggs, milk, and tangy crumbled feta cheese, it is baked to perfection for a creamy, savory casserole that is both satisfying and easy to prepare.

Ingredients

Scale

For the casserole

  • 1 tablespoon extra virgin olive oil
  • 1 small onion, diced (about 1.5 cups)
  • 5 ounces baby spinach
  • 12 eggs
  • 1 cup milk (of choice)
  • 1 cup crumbled feta cheese
  • ¾ teaspoon salt
  • ½ teaspoon freshly ground black pepper

Instructions

  1. Preheat the oven: Preheat your oven to 375°F (190°C) and grease a casserole dish to prevent sticking.
  2. Sauté the onions: Heat the olive oil in a skillet over medium heat. Add the diced onion and cook for 5-7 minutes until the onions become soft and translucent.
  3. Cook the spinach: Add the baby spinach to the skillet and cook for 2-3 minutes until the spinach is wilted and combined with the onions.
  4. Prepare the egg mixture: In a large bowl, whisk together the eggs, milk, salt, and freshly ground black pepper until smooth. Then fold in the crumbled feta cheese evenly throughout the mixture.
  5. Assemble the casserole: Spread the cooked spinach and onion mixture evenly in the bottom of the greased casserole dish. Pour the egg and feta mixture over the vegetables, ensuring an even layer.
  6. Bake: Place the casserole dish in the preheated oven and bake for 30-35 minutes. Bake until the eggs are fully set and the top is lightly golden brown.
  7. Rest and serve: Remove the casserole from the oven and let it rest for a few minutes to cool slightly before slicing and serving.

Notes

  • You can substitute the milk with a dairy-free alternative like almond or oat milk if desired.
  • For a richer flavor, consider adding herbs like dill or oregano to the egg mixture.
  • This casserole can be prepared the night before and baked fresh in the morning for convenience.
  • Leftovers can be refrigerated and reheated for a quick meal.
  • To make it vegetarian, ensure the feta cheese is free from animal rennet.
