- Mix Dry and Wet Ingredients: In a medium bowl, combine the all-purpose flour, cornmeal, egg, chopped green onion, minced jalapeño, smoked paprika, and salt to taste. Stir the mixture well to integrate all ingredients.
- Add Corn and Cheese: Fold in the corn kernels and shredded Monterey Jack cheese, ensuring even distribution throughout the batter.
- Adjust Consistency: Gradually add the milk, a little at a time, to achieve a moist batter that holds its shape but is not too runny. You may not need all the milk.
- Heat the Skillet: Heat olive oil over medium heat in a large skillet until shimmering but not smoking.
- Shape and Cook Fritters: Spoon 2-3 tablespoons of the batter onto the hot skillet for each fritter. Gently flatten each spoonful with a spatula to form small pancakes.
