Ingredients
Scale
Wrap and Base Ingredients
- 1 large flour tortilla
- 2 large eggs
- 1 tbsp milk or cream (for fluffier eggs)
- 1 tsp butter or oil (for scrambling)
- Salt and black pepper, to taste
Fillings and Toppings
- 1/4 cup shredded cheddar or pepper jack cheese
- 1/4 avocado, sliced or mashed
- 1 tbsp chili crisp (adjust to taste)
- Optional add-ins: baby spinach, chopped scallions, cooked bacon or sausage
Instructions
- Scramble the eggs: In a small bowl, whisk together the eggs, milk, salt, and black pepper until fully combined. Heat butter or oil in a nonstick skillet over medium heat. Pour in the egg mixture and cook gently, stirring occasionally, until the eggs are just set but still moist. Remove from heat promptly to prevent overcooking.
- Assemble the wrap: Lay the flour tortilla flat on a clean surface. In the center, spread the scrambled eggs evenly. Sprinkle the shredded cheese on top, then layer with sliced or mashed avocado. Add the chili crisp evenly over the filling. Incorporate any optional add-ins like baby spinach, chopped scallions, or cooked bacon or sausage if desired.
- Fold it up: Fold the sides of the tortilla inward over the filling, then carefully roll the tortilla from the bottom up to form a tight and secure wrap, sealing the contents inside.
- Toast the wrap (optional but recommended): Wipe out the skillet used for scrambling. Place the tortilla wrap seam-side down on the skillet over medium heat. Toast for 1 to 2 minutes on each side, or until the tortilla is golden brown and crispy, helping to meld the flavors and improve texture.
- Serve: Remove the wrap from the skillet. Slice in half if desired, and enjoy it hot for a warm, flavorful breakfast experience.
Notes
- You can adjust the amount of chili crisp to control the heat level according to your preference.
- Use whole wheat or gluten-free tortillas as alternatives if desired.
- Adding extra vegetables like baby spinach or scallions provides a fresh crunch and added nutrients.
- For a richer taste, substitute milk with cream in the eggs.
- Leftover cooked bacon or sausage can be added for added protein and flavor.
