Description

A flavorful and hearty Southwest Steak Bowl featuring seasoned grilled flank or skirt steak served over rice with black beans, corn, fresh vegetables, and a zesty lime finish. Perfect for a nutritious and satisfying dinner that’s easy to prepare and customizable with your favorite toppings.

Ingredients

Scale

For the Steak and Seasoning

  • 1 lb flank or skirt steak
  • 2 tablespoons olive oil
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • ½ teaspoon smoked paprika
  • ½ teaspoon garlic powder
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

For the Bowl

  • 2 cups cooked rice (white, brown, or cilantro lime)
  • 1 cup black beans, drained and rinsed
  • 1 cup corn kernels (fresh, frozen, or canned)
  • 1 cup cherry tomatoes, halved
  • 1 avocado, sliced
  • ¼ cup chopped red onion
  • ¼ cup chopped fresh cilantro
  • Juice of 1 lime

Optional Toppings

  • Sour cream
  • Shredded cheese
  • Jalapeños
  • Salsa
  • Hot sauce

Instructions

  1. Prepare the Steak and Spice Rub: In a small bowl, combine chili powder, cumin, smoked paprika, garlic powder, salt, and black pepper. Rub this spice mixture evenly over both sides of the flank or skirt steak for full flavor infusion.
  2. Cook the Steak: Heat olive oil in a skillet or grill pan over medium-high heat. Place the steak in the hot pan and cook for 4–5 minutes per side for medium-rare doneness, adjusting time if you prefer it more or less cooked.
  3. Rest and Slice: Transfer the cooked steak to a cutting board and let it rest for 5 minutes to allow the juices to redistribute. After resting, slice the steak thinly against the grain to ensure tenderness.
  4. Assemble the Bowls: Evenly divide the cooked rice among four bowls. Top each bowl with sliced steak, black beans, corn kernels, cherry tomatoes, sliced avocado, chopped red onion, and fresh cilantro.
  5. Add Lime and Optional Toppings: Squeeze fresh lime juice over each bowl to add brightness. Finish with your choice of optional toppings like sour cream, shredded cheese, jalapeños, salsa, or hot sauce to enhance flavor and texture.
  6. Serve Warm: Serve the Southwest Steak Bowls immediately while warm for the best taste experience.

Notes

  • You can marinate the steak in lime juice and olive oil prior to seasoning for extra flavor.
  • This bowl is versatile and can be made with grilled chicken, shrimp, or as a vegetarian option by substituting the steak with roasted vegetables.
  • Use cilantro lime rice to boost the Southwestern flavor profile.
  • Adjust spice levels by choosing mild or hot chili powder based on your preference.
