Description

This Slow Cooker Guinness Pot Roast is a comforting, hearty meal featuring a tender chuck roast braised in rich Guinness beer, combined with savory brown gravy and Italian dressing mixes, and slow-cooked alongside carrots and Yukon gold potatoes. Perfect for an easy, flavorsome dinner that requires minimal effort.

Ingredients

Scale

Meat and Oil

  • 1 (3 to 4-lb) chuck roast
  • 2 Tbsp olive oil

Seasonings and Liquids

  • 1 (0.87-oz) packet brown gravy mix
  • 1 (0.7-oz) packet Italian dressing mix
  • 1 (16-oz) can Guinness beer
  • 2 Tbsp tomato paste

Vegetables

  • 3 carrots, peeled and sliced
  • 3 Yukon gold potatoes, peeled and diced

Instructions

  1. Heat Oil and Sear Roast: Heat 2 tablespoons of olive oil in a large skillet over medium-high heat. Add the chuck roast and cook on all sides until it is lightly browned, which should take about 2 minutes per side. This step helps to lock in flavors and create a savory crust.
  2. Prepare Slow Cooker: Place the seared pot roast into a 6-quart slow cooker. This will be the base for slow braising the meat.
  3. Add Remaining Ingredients: Add the brown gravy mix, Italian dressing mix, Guinness beer, tomato paste, sliced carrots, and diced Yukon gold potatoes to the slow cooker, spreading them evenly around and on top of the roast.
  4. Slow Cook: Cover the slow cooker and cook on the LOW setting for 8 to 10 hours. This slow cooking process allows the meat to become tender and infused with the rich flavors from the beer and seasonings.

Notes

  • For extra flavor, you can deglaze the skillet with a splash of Guinness beer after searing the roast, scraping up browned bits before adding to the slow cooker.
  • If preferred, substitute baby carrots and whole small potatoes for convenience.
  • Ensure the slow cooker is properly covered to maintain moisture during cooking.
  • Leftovers can be stored in the refrigerator for up to 3 days or frozen for up to 2 months.
  • Serve with crusty bread or steamed greens for a complete meal.
