Description

This Slovenian Sweet Omelette is a delightful and fluffy treat featuring a light, airy pancake folded like a taco and filled with luscious cranberry jam and kirsch liqueur. Topped with sweetened whipped cream and fresh mixed berries, it offers a perfect balance of tart and sweet flavors, ideal for a special breakfast or dessert.

For the Omelette:

  • 2 eggs
  • 30 g sugar
  • 40 g all-purpose flour
  • 1/4 tsp vanilla paste
  • 1 tbsp kirsch liqueur
  • 40 g cranberry jam

For the Topping:

  • 160 ml whipping cream
  • 20 g icing sugar
  • 200 g mixed fresh berries


Instructions

  1. Preheat and prepare pan: Preheat your oven to 200°C (400°F). Grease a 20 cm round springform cake pan thoroughly to prevent sticking.
  2. Separate eggs and whisk yolks: Carefully separate the egg yolks from the whites. In a bowl, whisk the egg yolks with sugar and vanilla paste until the mixture turns fluffy and pale.
  3. Whip egg whites: In a clean bowl, whip the egg whites until they form stiff peaks, ensuring that they hold shape firmly.
  4. Combine mixtures: Gently fold half of the whipped egg whites into the egg yolk mixture to lighten it. Then add the flour and stir gently until combined. Finally, fold in the remaining whipped egg whites carefully to keep the batter airy.
  5. Bake the omelette: Pour the prepared batter into the greased pan and spread evenly. Place in the oven and bake for 8 minutes until set and lightly golden. Remove from oven and carefully free it from the pan.
  6. Form the taco shape: While still warm, fold the cooked omelette in half to resemble a taco shell. Allow it to cool for 3 to 5 minutes to set its shape.
  7. Prepare topping and assemble: Whip the whipping cream with icing sugar until soft peaks form. Remove any rolling pin if used during shaping. Brush the inside of the folded omelette with kirsch liqueur, then spread the cranberry jam evenly. Fill and decorate with mixed fresh berries and a generous dollop of whipped cream. Dust the top lightly with icing sugar for a beautiful finish.
