Description

A quick and flavorful shrimp and snow pea stir-fry featuring tender shrimp, crisp snow peas, and savory mushrooms tossed in a delicious blend of soy and oyster sauces. Perfect for a healthy weeknight dinner, this stir-fry is ready in under 30 minutes and pairs perfectly with rice or noodles.

Ingredients

Scale

Seafood and Vegetables

  • 1 pound shrimp, peeled and deveined
  • 8 ounces snow peas, trimmed
  • 1 cup mushrooms, sliced
  • 3 cloves garlic, minced

Sauces and Oils

  • 2 tablespoons soy sauce
  • 1 tablespoon oyster sauce
  • 1 teaspoon sesame oil
  • 2 tablespoons cooking oil (vegetable or canola oil)

Seasonings

  • Salt to taste
  • Black pepper to taste

Instructions

  1. Heat Oil: In a wok or large skillet, heat 2 tablespoons of cooking oil over medium-high heat until shimmering and hot.
  2. Cook Shrimp: Add the peeled and deveined shrimp to the pan. Cook them for about 2-3 minutes until they turn pink and opaque. Remove the shrimp from the pan and set aside on a plate.
  3. Sauté Garlic and Mushrooms: Add the minced garlic and sliced mushrooms to the same pan. Sauté them for 2-3 minutes until the mushrooms soften and release their aroma.
  4. Add Snow Peas: Toss in the trimmed snow peas, stirring constantly, and cook for an additional 1-2 minutes. The snow peas should become bright green and tender-crisp.
  5. Combine Ingredients: Return the cooked shrimp to the pan with the vegetables. Add 2 tablespoons soy sauce, 1 tablespoon oyster sauce, and 1 teaspoon sesame oil. Toss everything thoroughly to combine all the flavors.
  6. Season: Season the stir-fry with salt and black pepper according to your preference. Cook for another minute to heat everything through evenly.
  7. Serve: Serve the shrimp and snow pea stir-fry hot, ideally over steamed rice or cooked noodles for a complete meal.

Notes

  • Be careful not to overcook the shrimp to keep them tender and juicy.
  • You can substitute snow peas with snap peas or sugar snap peas as alternatives.
  • For a gluten-free version, use tamari instead of soy sauce and verify that oyster sauce is gluten-free.
  • Add a pinch of red pepper flakes if you like a bit of heat in your stir-fry.
  • Feel free to add other vegetables like bell peppers or baby corn to enrich the dish.
