  • 1 tablespoon balsamic vinegar

Instructions

  1. Heat the Oil: Heat 2 tablespoons of olive oil in a skillet over medium-high heat until shimmering.
  2. Season the Cod: Pat the cod fillets dry and season both sides generously with salt and pepper.
  3. Sear the Cod: Place the cod fillets in the hot skillet and sear for about 4-5 minutes on each side, or until the fish is golden brown and flakes easily with a fork.
  4. Sauté the Garlic: In another pan, heat 1 tablespoon of olive oil and sauté the minced garlic until fragrant, about 30 seconds to 1 minute, being careful not to burn it.
  5. Cook the Tomatoes: Add the halved cherry tomatoes to the garlic and cook until they begin to soften and release their juices, about 4-5 minutes.
  6. Add Basil and Vinegar: Stir in the chopped fresh basil and balsamic vinegar and cook for an additional minute to blend the flavors.
