Ingredients
Scale
Bread and Butter
- 2 slices of bread (white, whole wheat, or sourdough)
- 2 tablespoons unsalted butter (divided)
Eggs
- 2 large eggs
- Salt, to taste
- Black pepper, to taste
Cheese and Optional Toppings
- 2 slices of cheese (cheddar, American, or your favorite cheese)
- Optional toppings: hot sauce, fresh herbs, avocado, or bacon
Instructions
- Make the scrambled eggs: Crack the eggs into a bowl and whisk together with a pinch of salt and pepper until fully combined, ensuring a smooth egg mixture.
- Heat skillet and melt butter: Place a nonstick skillet over medium-low heat and add 1 tablespoon of butter, allowing it to melt evenly.
- Cook the scrambled eggs: Pour the whisked eggs into the skillet. Let them set slightly before gently stirring with a spatula to form soft curds. Remove from heat when eggs are still slightly underdone as they will continue cooking off the pan.
- Prepare grilling skillet: While eggs cook, heat another skillet or griddle over medium heat to prepare for grilling the sandwich.
- Butter the bread: Spread about 1 tablespoon of butter on one side of each bread slice to ensure a golden crispy texture upon grilling.
- Assemble the sandwich: Place the cheese slices between the unbuttered sides of the bread, creating the grilled cheese base.
- Grill the sandwich: Place the assembled sandwich on the hot skillet, buttered side down. Grill each side for 2-3 minutes until the bread is golden brown and the cheese fully melts.
- Add scrambled eggs: Remove the grilled sandwich from the skillet, open it slightly, and add the scrambled eggs inside. Close the sandwich back up carefully.
- Serve: Cut the sandwich in half for easy eating and serve immediately. Pair with pickles, chips, or your favorite dipping sauce for a complete meal.
