  • Salt to taste
  • Black pepper to taste


Instructions

  1. Preheat and Prepare Potatoes: Preheat the oven to 425°F (220°C). Peel the sweet potatoes and cut them into 1-inch cubes to ensure even roasting.
  2. Season the Potatoes: In a mixing bowl, toss the sweet potato cubes with extra virgin olive oil, salt, black pepper, and fresh rosemary until all pieces are evenly coated.
  3. Roast the Potatoes: Spread the seasoned sweet potatoes in a single layer on a parchment-lined baking sheet. Roast in the preheated oven for about 30 minutes, or until the potatoes are golden brown and tender when pierced with a fork.
  4. Add Goat Cheese and Finish Roasting: Remove the baking sheet from the oven, evenly sprinkle the crumbled goat cheese over the roasted sweet potatoes, then return it to the oven for a few more minutes until the cheese is melted and slightly creamy.
