Sweet Potatoes

Cheese
- 4 oz (113g) fresh goat cheese, crumbled
Seasonings & Oil
- 2 tbsp extra virgin olive oil
- 2 tsp fresh rosemary
- Salt to taste
- Black pepper to taste
Instructions
- Preheat and Prepare Potatoes: Preheat the oven to 425°F (220°C). Peel the sweet potatoes and cut them into 1-inch cubes to ensure even roasting.
- Season the Potatoes: In a mixing bowl, toss the sweet potato cubes with extra virgin olive oil, salt, black pepper, and fresh rosemary until all pieces are evenly coated.
- Roast the Potatoes: Spread the seasoned sweet potatoes in a single layer on a parchment-lined baking sheet. Roast in the preheated oven for about 30 minutes, or until the potatoes are golden brown and tender when pierced with a fork.
- Add Goat Cheese and Finish Roasting: Remove the baking sheet from the oven, evenly sprinkle the crumbled goat cheese over the roasted sweet potatoes, then return it to the oven for a few more minutes until the cheese is melted and slightly creamy.
Notes
- For extra flavor, you can add a drizzle of honey or balsamic glaze after roasting.
- Make sure to cut the sweet potatoes into uniform pieces to cook evenly.
- Use fresh rosemary for the best aromatic results; dried rosemary can be substituted but reduce the quantity by half.
