Delicious roasted sweet potato rounds topped with creamy feta cheese, drizzled honey, and fresh herbs. This easy-to-make recipe creates a perfect balance of sweet and savory flavors, ideal as a side dish or appetizer.
Ingredients
Scale
Sweet Potato Rounds
- 2 large sweet potatoes, peeled and sliced into 1/2-inch thick rounds
- 2 tbsp olive oil
- Salt and pepper, to taste
Toppings and Garnish
- 1/4 cup crumbled feta cheese
- 2 tbsp honey
- 1 tbsp fresh parsley, chopped (for garnish)
- 1 tsp fresh thyme leaves (optional, for added flavor)
Instructions
- Preheat the Oven: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or a silicone baking mat to prevent sticking and help with easy cleanup.
- Prepare the Sweet Potatoes: Arrange the sweet potato slices in a single layer on the prepared baking sheet. Drizzle them evenly with olive oil, then season with salt and pepper. Toss the slices gently to ensure each is evenly coated with oil and seasoning.
- Roast the Sweet Potatoes: Place the baking sheet in the preheated oven and roast the sweet potato rounds for 20-25 minutes. Flip them halfway through cooking to ensure both sides become tender and lightly golden brown.
- Top with Feta and Honey: Once roasted, remove the sweet potato rounds from the oven. While they’re still warm, sprinkle the crumbled feta cheese evenly over the top of each slice so it can slightly soften and meld with the potatoes.
- Drizzle with Honey: Drizzle the honey evenly over the sweet potato rounds. The warm potatoes will help the honey spread and enhance the sweet flavor profile.
- Garnish and Serve: Finish by sprinkling fresh parsley and optional thyme leaves over the top for a burst of color and fresh herb flavor. Serve immediately as a flavorful side dish or appetizer.
Notes
- You can substitute goat cheese for feta if preferred for a creamier texture.
- For a spicier twist, sprinkle a pinch of cayenne or smoked paprika along with salt and pepper before roasting.
- Sweet potatoes can be roasted a day ahead and topped just before serving.
- Ensure slices are uniform in thickness for even cooking.
- Honey can be warmed slightly for easier drizzling if it’s too thick.
