Hummus Ingredients
- 2 medium-sized beets (300g)
- 1 cup tahini
- 2 tbsp extra virgin olive oil plus extra for drizzling
- 2 garlic cloves, minced
- 3 tbsp fresh lemon juice
- Salt to taste
- Black pepper to taste
Serving
- Fresh vegetables for serving (carrots, cucumbers)
- Pita chips for serving
Instructions
- Roast Beets: Preheat your oven to 400°F (200°C). Wrap each beet individually in foil and place them on a baking sheet. Roast for 60 minutes until the beets are fork-tender, which allows their natural sweetness to develop fully.
- Peel Beets: Allow the roasted beets to cool slightly for about 10 minutes. Once cool enough to handle, peel the skins off using your hands or a knife; the skins should slip off easily after roasting.
- Blend Ingredients: In a food processor, combine the peeled beets, tahini, minced garlic, fresh lemon juice, salt, and black pepper. Blend for 2-3 minutes, gradually adding water to reach your desired creamy consistency.
- Serve: Transfer the beet hummus to a serving platter. Drizzle with extra virgin olive oil and arrange fresh vegetables and pita chips around the edges for dipping. Optionally, garnish with paprika for added color and flavor.
Notes
- For smoother hummus, peel beets immediately after roasting while still warm.
- Add water gradually to control the thickness of the hummus to your preference.
- Use fresh lemon juice instead of bottled for brighter flavor.
- Garnish with paprika or chopped herbs like parsley for extra visual appeal.
- Roasted beet hummus can be stored in an airtight container in the refrigerator for up to 4 days.
- Feel free to adjust garlic and lemon juice according to taste preferences.
