- 1 1/2 cups heavy cream, divided

- 8 oz (225g) cream cheese, softened
- 1/2 cup powdered sugar

Instructions
- Make the Raspberry Sauce: In a small saucepan, combine raspberries, granulated sugar, and lemon juice. Cook over medium heat until the raspberries break down, about 5 minutes. Stir in the cornstarch mixture and continue cooking for another 2 minutes or until the sauce thickens. Remove from heat and allow to cool completely.
- Prepare the White Chocolate: Melt the finely chopped white chocolate using a double boiler method by placing the bowl over simmering water. Stir continuously until smooth. Remove from heat and let it cool to room temperature.
- Whip the Cream: In a clean bowl, whip 1 cup of the heavy cream with vanilla extract until stiff peaks form. Set aside.
- Mix the Cream Cheese Base: In another bowl, beat the softened cream cheese and powdered sugar together until smooth and creamy. Gently fold the cooled melted white chocolate into the cream cheese mixture until well combined.
- Combine Mousse Components: Carefully fold the whipped cream into the white chocolate and cream cheese mixture until fully incorporated and light.
- Assemble the Parfaits: In serving glasses, alternate layers of the white chocolate mousse, raspberry sauce, and fresh raspberries. Continue layering until the glasses are filled, finishing with a top layer of mousse.
