Description

Quick Cheesy Beef Biscuit Bombs are a delicious and easy-to-make main course featuring savory ground beef, melted cheddar cheese, and soft biscuit dough baked to golden perfection. Perfect for a comforting dinner or a fun snack, these stuffed biscuits are a crowd-pleaser that can be enhanced with optional spices and additional fillings.

Ingredients

Scale

Beef Mixture

  • 1 pound ground beef
  • 1/2 small onion, finely chopped
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon smoked paprika (optional)

Cheese and Biscuit Bombs

  • 1 cup shredded cheddar cheese
  • 1 (16-ounce) can refrigerated biscuit dough (8 biscuits)
  • 2 tablespoons melted butter
  • 1/2 teaspoon dried parsley or Italian seasoning for topping

Instructions

  1. Preheat Oven: Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper to prevent sticking.
  2. Cook Beef Mixture: In a skillet over medium heat, cook the ground beef and finely chopped onion until the beef is browned and fully cooked. Drain any excess fat to keep the mixture from being greasy.
  3. Season: Stir in garlic powder, salt, black pepper, and smoked paprika if using. Mix well and remove from heat. Allow the mixture to cool slightly to make handling easier.
  4. Prepare Biscuit Dough: Flatten each biscuit into a 4–5 inch circle on a clean surface, preparing it to be filled.
  5. Assemble Bombs: Add about 2 tablespoons of the beef mixture and 1 to 2 tablespoons of shredded cheddar cheese to the center of each flattened biscuit.
  6. Shape Bombs: Fold the biscuit dough around the filling and pinch the edges together securely to form a ball. Place each ball seam-side down on the prepared baking sheet.
  7. Finish Topping: Brush the tops of each biscuit bomb with melted butter, then sprinkle with dried parsley or Italian seasoning for added flavor and a nice finish.
  8. Bake: Bake in the preheated oven for 15–18 minutes, or until the biscuit bombs are golden brown and cooked through.
  9. Serve: Serve warm. These biscuit bombs pair wonderfully with dips like marinara or ranch for extra flavor.

Notes

  • For extra flavor, add diced jalapeños, cooked bacon bits, or switch the cheese to pepper jack.
  • Serve with marinara sauce or ranch dressing as dipping sauces.
  • Reheat leftovers in an oven or air fryer to maintain a crispy texture.
