Instructions

- Combine: Place all ingredients except the optional toppings (dates, almond flour, desiccated coconut, raw cacao powder, peppermint extract, vanilla extract, water, and sea salt) into a large food processor. Pulse the mixture until it begins to stick together and forms a cohesive mass suitable for rolling.
- Roll: Using a tablespoon measure, scoop out portions of the mixture and roll each into a compact ball shape with clean hands, forming approximately 12 balls in total.
- Optional Toppings: If desired, pour mini chocolate chips or extra desiccated coconut into small dishes. Roll the energy balls gently in these toppings to coat them evenly, or choose to leave the balls plain without coating.
- Freeze: Arrange the formed balls on the lined baking sheet, spacing them out slightly. Place the tray in the freezer for about 1 hour to firm up the energy balls before serving or storing.
