  • 1 cup medjool dates, pitted (approx 10 dates)
  • 3/4 cup almond flour
  • 1/2 cup desiccated coconut
  • 3 Tbsp raw cacao powder
  • 1 tsp peppermint extract (food grade)
  • 1/2 tsp vanilla extract
  • 2 Tbsp water
  • Pinch of sea salt
  • Optional toppings: mini chocolate chips, extra coconut


Instructions

  1. Prep: Line a small baking sheet with parchment paper to prepare a clean surface for placing the rolled energy balls.
  2. Combine: Add all bulk ingredients (dates, almond flour, desiccated coconut, raw cacao powder, peppermint extract, vanilla extract, water, and sea salt) into a large food processor. Pulse until the mixture forms a sticky mass that holds together, indicating it’s ready for shaping.
  3. Roll: Using your hands, scoop about a tablespoon of the mixture and roll it into a smooth ball. Repeat this for the entire mixture to create approximately 12 balls.
  4. Optional Toppings: If desired, place mini chocolate chips or extra coconut flakes in a small dish. Roll each ball gently in the toppings to coat them evenly or leave them plain as preferred.
  5. Freeze: Arrange the rolled balls on the lined baking sheet and place in the freezer for 1 hour to firm up. Once firm, they are ready to serve or store.
