Ingredients
Scale
Mashed Purple Sweet Potatoes
- 2 pounds purple “stokes” sweet potatoes (roughly 2 large)
- 1/2 cup milk (cow’s milk or unsweetened, unflavoured dairy-free alternative, or cream)
- 1/4 cup butter (regular, unsalted or dairy-free alternative)
- 1/4 tsp cinnamon
- 1/8 tsp nutmeg
- 1/2 tsp garlic powder
- 2 Tbsp chopped parsley
- 2 Tbsp chopped green onion
- Salt, to taste
Instructions
- Prep: Peel and wash the purple sweet potatoes. Cut them into roughly 1-inch thick cubes to ensure even cooking.
- Boil Potatoes: Place the sweet potato cubes in a large pot and cover them completely with water. Cover the pot with a lid, set heat to high and bring the water to a boil.
- Simmer: Once boiling, reduce the heat to low and let the potatoes simmer, covered, for about 15 minutes or until they can be easily pierced with a fork.
- Drain: Turn off the heat and drain the water from the pot using a colander or strainer.
- Add Ingredients: To the cooked and drained sweet potatoes, add the milk, butter, cinnamon, nutmeg, garlic powder, and salt. Season generously according to taste.
- Mash: Mash the sweet potatoes with a potato masher until you reach your desired texture. If the mash is too thick, add more milk or butter for a creamier consistency. Taste and adjust seasonings as needed.
- Finish and Serve: Stir in the chopped parsley and green onion for freshness. Serve the mashed purple sweet potatoes hot as a flavorful side dish.
Notes
- You can substitute milk with any dairy-free alternative such as almond or oat milk to keep this recipe lactose-free.
- Adjust the spice levels to your preference; these warm spices complement the natural sweetness of the potatoes.
- Use unsalted butter or a plant-based butter alternative for dietary needs.
- For a smoother texture, you can use a hand mixer instead of a masher.
- This dish pairs wonderfully with roasted meats or grilled vegetables.
