Ingredients
Scale
Puff Pastry Base
- 2 sheets puff pastry (thawed)
- 1 egg yolk (for egg wash)
- 1 tablespoon water (for egg wash)
- 4 tablespoons fresh thyme leaves
Filling and Topping
- ½ cup fig jam (or your favorite jam)
- 8 ounces brie (cut into bite sized pieces)
- 2 tablespoons honey (for drizzling)
- ½ teaspoon flaky sea salt (or more to taste)
Instructions
- Preheat Oven: Preheat your oven to 400°F (205°C) and position the rack in the middle to ensure even baking.
- Prepare Puff Pastry: Thaw the puff pastry sheets on a floured surface. Using a cookie cutter, cut out larger shapes from the puff pastry, then lightly score a slightly smaller shape inside each to create a raised rim for holding the filling.
- Make Egg Wash and Brush: Whisk together the egg yolk and water until smooth. Use a pastry brush to lightly coat each puff pastry piece with the egg wash to give a golden finish when baked.
- Add Thyme: Sprinkle fresh thyme leaves evenly over the brushed puff pastry pieces for an aromatic touch.
- Bake Puff Pastry Shells: Place the prepared pastry pieces on a parchment-lined baking sheet and bake for 13-14 minutes until they are puffed and golden brown.
- Prepare Brie: While pastry bakes, cut the brie into bite-sized pieces. For easier slicing, chill the brie in the freezer for 15 minutes before cutting.
- Create Filling Pocket: Remove the baked puff pastry from the oven and gently press down the center of each piece with a measuring spoon to create a pocket for the filling.
- Fill Pastry Bites: Add a small dollop of fig jam into each pastry pocket, then top with a piece of brie.
- Melt the Brie: Return the filled pastry bites to the oven for an additional 2-3 minutes, or until the brie is melted and gooey.
- Finish and Serve: Remove from the oven and immediately sprinkle with additional fresh thyme, drizzle with honey, and finish with a pinch of flaky sea salt. Serve warm and enjoy!
Notes
- Thaw puff pastry completely for best results to prevent cracking or tearing.
- Freezing brie for 15 minutes before slicing makes cutting easier and cleaner.
- You can swap fig jam with other sweet jams like apricot or raspberry based on preference.
- Use flaky sea salt for texture and bursts of salty flavor, but regular salt can be substituted if needed.
- These bites are best served warm as the brie tastes best melted.
