Chicken and Marinade

Instructions
- Prepare the marinade: In a large bowl or zip-top bag, whisk together olive oil, lime juice, minced garlic, soy sauce, white vinegar, ground cumin, smoked paprika, dried oregano, salt, black pepper, and ground coriander until fully combined.
- Marinate the chicken: Add the chicken thighs or breasts to the marinade and toss them thoroughly to coat evenly. Cover the bowl or seal the bag, then refrigerate for at least 30 minutes—ideally 2 to 4 hours—to allow the flavors to penetrate the meat.
- Preheat the grill: Heat your outdoor grill or grill pan over medium-high heat. Ensure it’s hot before cooking to achieve perfect grill marks and to cook the chicken evenly.
