Description

Pecan Pie Lasagna is a delicious no-bake layered dessert combining the richness of creamy cheesecake, the crunch of caramelized pecans, and the ease of no-bake lasagna noodles. It’s a delightful, indulgent treat perfect for any occasion that requires a show-stopping dessert with minimal effort.

Ingredients

Scale

Lasagna Noodles

  • 1 package of no-bake lasagna noodles

Cheesecake Mixture

  • 1 cup heavy cream
  • 1 package (8 oz) cream cheese, softened
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 1/2 cups whipped topping

Pecan Syrup Mixture

  • 2 cups chopped pecans
  • 1/2 cup butter
  • 1/2 cup brown sugar
  • 1/4 cup corn syrup
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt

Optional Topping

  • 1/2 cup chocolate chips

Instructions

  1. Prepare Noodles: Prepare the no-bake lasagna noodles according to package instructions, then set them aside to cool.
  2. Make Cheesecake Mixture: In a medium mixing bowl, beat together the cream cheese, powdered sugar, and vanilla extract until smooth. Add in the whipped topping and mix until well combined. Set aside.
  3. Cook Pecan Syrup: In a saucepan, melt butter over medium heat. Add brown sugar, corn syrup, cinnamon, and salt. Stir and let the mixture simmer for 3-5 minutes, allowing the sugar to dissolve and the mixture to thicken.
  4. Add Pecans: Add the chopped pecans to the saucepan and stir to coat them with the syrup mixture. Continue cooking for 1-2 minutes, then remove from heat.
  5. Assemble Layers: To assemble the lasagna, spread a thin layer of the cheesecake mixture in the bottom of a 9×13 inch dish. Top with a layer of lasagna noodles, then spread a layer of the pecan mixture on top.
  6. Layer Repeat: Repeat the layers, finishing with the remaining cheesecake mixture on top.
  7. Chill: Cover the lasagna with plastic wrap and refrigerate for at least 4 hours, or overnight, to allow the flavors to meld and the dessert to set.
  8. Serve: Before serving, sprinkle with chocolate chips, if desired, for an extra touch of indulgence.

Notes

  • Ensure the lasagna noodles are completely cool before assembling to avoid melting the cheesecake mixture.
  • For best flavor, refrigerate overnight instead of just 4 hours.
  • Chocolate chips are optional but add a lovely contrast of flavors and textures.
  • Store leftovers covered in the refrigerator for up to 3 days.
