Lasagna Noodles

- 1 1/2 cups whipped topping
Pecan Syrup Mixture
- 2 cups chopped pecans
- 1/2 cup butter
- 1/2 cup brown sugar
- 1/4 cup corn syrup
- 1/2 teaspoon cinnamon
- 1/4 teaspoon salt
Optional Topping
- 1/2 cup chocolate chips
Instructions
- Prepare Noodles: Prepare the no-bake lasagna noodles according to package instructions, then set them aside to cool.
- Make Cheesecake Mixture: In a medium mixing bowl, beat together the cream cheese, powdered sugar, and vanilla extract until smooth. Add in the whipped topping and mix until well combined. Set aside.
- Cook Pecan Syrup: In a saucepan, melt butter over medium heat. Add brown sugar, corn syrup, cinnamon, and salt. Stir and let the mixture simmer for 3-5 minutes, allowing the sugar to dissolve and the mixture to thicken.
- Add Pecans: Add the chopped pecans to the saucepan and stir to coat them with the syrup mixture. Continue cooking for 1-2 minutes, then remove from heat.
- Assemble Layers: To assemble the lasagna, spread a thin layer of the cheesecake mixture in the bottom of a 9×13 inch dish. Top with a layer of lasagna noodles, then spread a layer of the pecan mixture on top.
- Layer Repeat: Repeat the layers, finishing with the remaining cheesecake mixture on top.
- Chill: Cover the lasagna with plastic wrap and refrigerate for at least 4 hours, or overnight, to allow the flavors to meld and the dessert to set.
- Serve: Before serving, sprinkle with chocolate chips, if desired, for an extra touch of indulgence.
