Description

A refreshing and vibrant Pear Pomegranate Salad combining mixed greens, sweet pears, juicy pomegranate seeds, tangy goat cheese, and crunchy candied nuts, tossed in a light honey-Dijon vinaigrette. Perfect for a healthy, colorful starter or side dish during the winter and holiday seasons.

Ingredients

Scale

Salad Ingredients

  • 6 cups mixed greens (such as arugula, spinach, or spring mix)
  • 2 ripe pears, thinly sliced
  • 1/2 cup pomegranate seeds
  • 1/4 cup crumbled goat cheese or feta
  • 1/4 cup candied pecans or walnuts
  • 2 tablespoons red onion, thinly sliced

Dressing Ingredients

  • 3 tablespoons olive oil
  • 1 tablespoon apple cider vinegar
  • 1 tablespoon honey or maple syrup
  • 1 teaspoon Dijon mustard
  • Salt and black pepper to taste

Instructions

  1. Prepare the salad base: In a large salad bowl, place the mixed greens as the foundation for the salad.
  2. Add toppings: Arrange the thinly sliced pears, pomegranate seeds, crumbled goat cheese, candied pecans or walnuts, and thinly sliced red onion evenly over the greens.
  3. Make the dressing: In a small jar or bowl, whisk together the olive oil, apple cider vinegar, honey or maple syrup, Dijon mustard, salt, and black pepper until the dressing is well emulsified and smooth.
  4. Toss and serve: Drizzle the dressing over the assembled salad just before serving. Toss gently to evenly coat all ingredients without bruising the delicate greens and fruit.

Notes

  • For added protein, top with grilled chicken or cooked quinoa.
  • Bartlett or Bosc pears are ideal for their sweetness and texture.
  • The dressing can be prepared ahead and stored in the refrigerator for up to 1 week, making it convenient for meal prep.
