Scale
Ingredients
- 1.5 cups old-fashioned oats
- 1 cup creamy peanut butter
- 1/2 cup mini chocolate chips
- 1/2 cup ground flaxseed
- 4 tablespoons honey (or maple syrup)
Instructions
- Mix ingredients: In a large bowl, combine the oats, creamy peanut butter, mini chocolate chips, ground flaxseed, and honey. Stir thoroughly until all ingredients are evenly incorporated into a thick, sticky mixture.
- Chill the mixture: Place the bowl in the refrigerator for 10 to 15 minutes to allow the mixture to firm up, making it easier to handle and roll into balls.
- Shape into balls: After chilling, remove the mixture from the fridge and use your hands to roll it into approximately 18 bite-sized energy balls, each about one inch in diameter.
- Store properly: Transfer the energy balls into an airtight container and store them in the refrigerator to maintain freshness. They will keep well for up to two weeks.
Notes
- You can substitute honey with maple syrup to make it vegan.
- Ensure the peanut butter is creamy for best mixing consistency.
- For a nut-free option, consider using sunflower seed butter instead of peanut butter.
- Add a pinch of salt if you prefer a slightly salty-sweet balance.
- These energy balls can also be frozen for up to 3 months; just thaw before eating.
