Description

This Panko Parmesan Baked Cod is a crispy and flavorful seafood dish featuring tender cod fillets coated in a savory mixture of panko breadcrumbs, Parmesan cheese, and aromatic spices, baked to golden perfection. It’s a quick and easy recipe perfect for a healthy weeknight dinner.

Ingredients

Scale

Fish

  • 4 cod fillets (about 6 oz each)
  • Salt and pepper, to taste

Coating

  • 1 cup panko breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon dried thyme
  • 1 teaspoon paprika
  • 1/4 cup unsalted butter, melted

Garnish

  • 2 tablespoons fresh parsley, chopped
  • Lemon wedges, for serving

Instructions

  1. Preheat Oven: Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper or lightly grease it to prevent sticking during baking.
  2. Season Cod: Season the cod fillets with salt and pepper evenly on both sides to enhance flavor.
  3. Prepare Coating: In a shallow bowl, combine the panko breadcrumbs, grated Parmesan cheese, garlic powder, dried thyme, and paprika. Mix well to evenly distribute the spices.
  4. Coat Fillets: Dip each cod fillet into the melted butter to moisten, then press it firmly into the panko mixture, coating both sides thoroughly. Place the coated fillets onto the prepared baking sheet.
  5. Bake: Bake the coated cod fillets in the preheated oven for 15-20 minutes, or until the fish is cooked through, flakes easily with a fork, and the topping is golden brown and crispy.
  6. Garnish and Serve: Remove from oven and garnish the cod with freshly chopped parsley. Serve immediately with lemon wedges for squeezing over the top.

Notes

  • For best results, use fresh cod fillets that are uniform in thickness to ensure even cooking.
  • Adjust seasoning of the coating mixture according to taste preferences.
  • If you prefer less fat, substitute melted butter with olive oil.
  • Serve with a side of steamed vegetables or a fresh salad for a complete meal.
  • Make sure not to overbake to keep the fish moist and flaky.
