- 1 package (14 oz) flaked sweetened coconut
Instructions
- Prepare the base mixture: Crush the vanilla wafers until they are very fine crumbs. In a large bowl, combine the crushed wafers with the confectioners’ sugar and mix thoroughly to evenly distribute the sugar.
- Add liquid and nuts: Pour the undiluted, thawed orange juice concentrate into the mixture. Then add the finely chopped nuts of your choice. Mix all ingredients well until a consistent dough-like texture forms, which will hold together when shaped.
- Shape the balls: Using your hands, form the mixture into small, bite-sized balls. Ensure each ball is compact and evenly sized for consistent coating and presentation.
- Coat with coconut: Roll each formed ball generously in the flaked sweetened coconut until fully covered. This adds a sweet and textured outer layer.
- Chill and store: Place the coated balls in an airtight container and refrigerate. Chill for at least 30 minutes before serving to allow them to firm up and the flavors to meld.

- Use undiluted orange juice concentrate for the best flavor and texture.
- For nuts, pecans add a nice flavor, but walnuts or almonds can be used as substitutes.
