Description

This No-Peek Chicken Casserole is a comforting and easy-to-make baked dish featuring tender chicken breasts layered on a flavorful rice mixture with creamy soups and onion soup mix. It’s a fuss-free meal perfect for a family dinner, requiring minimal prep and baking all in one pan for convenience and delicious results.

Ingredients

Scale

Chicken and Rice

  • 1 lb boneless, skinless chicken breasts
  • 2 cups Minute Rice (brown or white)

Soup Mixture

  • 1 can cream of chicken soup (10.5 oz)
  • 1 can cream of mushroom soup (10.5 oz)
  • 1 can water (use empty soup can for measurement)

Other

  • 1 tablespoon butter
  • 1 envelope Lipton Onion Soup mix (about 1 oz)

Instructions

  1. Preheat Oven: Preheat your oven to 350°F (175°C) to ensure it reaches the perfect temperature for baking the casserole.
  2. Grease Baking Pan: Use the tablespoon of butter to thoroughly grease a 9×13 inch baking pan. This prevents sticking and enhances flavor.
  3. Mix Soup and Rice: In a medium bowl, combine the cream of mushroom soup, cream of chicken soup, water, and Minute Rice. Stir until well mixed to create the rice base.
  4. Layer Mixture: Pour the rice and soup mixture evenly into the prepared baking pan, spreading it out to form a consistent layer.
  5. Add Chicken: Place the boneless, skinless chicken breasts on top of the rice mixture, ensuring even spacing.
  6. Sprinkle Onion Soup Mix: Evenly sprinkle the Lipton Onion Soup mix over the chicken breasts to season and add depth of flavor.
  7. Cover and Bake: Cover the baking pan tightly with aluminum foil. Bake in the preheated oven for about 1 to 1.5 hours, or until the chicken is fully cooked and tender.

Notes

  • You can use either brown or white Minute Rice depending on your preference.
  • Make sure to tightly cover the casserole with foil to keep moisture in and cook the rice properly.
  • Check the internal temperature of the chicken to ensure it reaches 165°F for safe consumption.
  • Let the casserole rest for a few minutes before serving to allow flavors to settle.
