Instructions
- Prepare the workspace: Lay out 2 or 3 sheets of parchment paper on your counter to prevent sticking and for easy cooling of the cookies.
- Combine and boil ingredients: In a medium pot, combine the granulated sugar, cocoa powder, butter, milk, and vanilla extract. Place over medium heat and bring the mixture to a rolling boil, cooking it for exactly 1 minute to ensure proper consistency.
- Add peanut butter and oats: Remove the pot from heat and immediately stir in the creamy peanut butter until the mixture is smooth and fully combined. Then stir in the quick oats thoroughly to form the cookie batter.
- Form cookies: Working quickly before the mixture cools and hardens, drop spoonfuls of the batter onto the prepared parchment paper. Space them evenly to prevent sticking.
- Cool and set: Allow the cookies to cool on the parchment paper for 10-15 minutes until they firm up and are ready to be enjoyed.
Notes
- Use quick oats for the best texture. Old-fashioned oats can be used but may alter the bite.
- Work quickly when dropping the cookies to prevent the mixture from hardening in the pot.
