- 2 cups granulated sugar
- 1/4 cup cocoa powder
- 3 cups quick oats (instant oats)
Wet Ingredients
- 1/2 cup butter
- 1/2 cup milk
- 1 tablespoon vanilla extract
- 3/4 cup creamy peanut butter
Instructions
- Prepare workspace: Lay out 2 or 3 sheets of parchment paper on your counter to place the cookies on once dropped, allowing them to cool and set without sticking.
- Combine ingredients: In a medium pot, mix together the granulated sugar, cocoa powder, butter, milk, and vanilla extract. Heat over medium heat until the mixture reaches a rolling boil, then let it boil for exactly 1 minute to properly thicken the mixture.
- Add peanut butter and oats: Remove the pot from heat and immediately stir in the creamy peanut butter until the mixture becomes smooth. Then fold in the quick oats thoroughly until evenly combined.
- Form cookies: Working quickly before the mixture starts to harden, drop spoonfuls of the batter onto the prepared parchment paper sheets. Space them out adequately to prevent spreading and sticking.
- Cool and set: Allow the dropped cookies to cool for 10-15 minutes at room temperature. They will firm up and become ready to enjoy once set.
Notes
- Use quick oats for best texture and faster setting; regular rolled oats can be used but cookies may be chewier.
- Ensure the mixture boils for a full minute to achieve the right consistency.
