Description

Delicious and easy no-bake cookies made with cocoa, peanut butter, and oats. These sweet treats come together quickly on the stovetop and require no oven, making them a perfect no-fuss dessert for any occasion.

Ingredients

Scale

Dry Ingredients

  • 2 cups granulated sugar
  • 1/4 cup cocoa powder
  • 3 cups quick oats (instant oats)

Wet Ingredients

  • 1/2 cup butter
  • 1/2 cup milk
  • 1 tablespoon vanilla extract
  • 3/4 cup creamy peanut butter

Instructions

  1. Prepare parchment paper: Lay out 2 or 3 sheets of parchment paper on your countertop to place the cookies on once formed.
  2. Mix and boil liquid ingredients with sugar and cocoa: In a medium pot, combine the granulated sugar, cocoa powder, butter, milk, and vanilla extract. Bring the mixture to a rolling boil over medium heat and cook for 1 minute, stirring occasionally to ensure nothing sticks or burns.
  3. Combine peanut butter and oats: Remove the pot from heat. Stir in the creamy peanut butter until the mixture is smooth and fully combined. Then add the quick oats and mix thoroughly to coat all oats well.
  4. Drop cookie batter onto parchment: Working quickly while the mixture is still warm, drop spoonfuls of the batter onto the prepared parchment paper, shaping into cookies as you go.
  5. Cool and set cookies: Allow the cookies to cool and harden for 10-15 minutes at room temperature before serving.

Notes

  • Use parchment paper or wax paper to prevent sticking when dropping the cookies.
  • Work quickly after removing from heat as the mixture sets fast.
  • Use quick oats for best texture; old-fashioned oats will change the consistency.
  • Store cookies in an airtight container at room temperature for up to 1 week.
