Description

These no-bake chocolate oatmeal cookie bars combine the rich flavors of cocoa, peanut butter, and chocolate chips with wholesome rolled oats for a quick, delicious treat. Perfect for a healthy snack or dessert without the need for an oven or stovetop cooking.

  • 1/2 cup semisweet or milk chocolate chips
  • 2 tablespoons unsalted butter
  • 1 tablespoon peanut butter (optional)


Instructions

  1. Prepare the liquid mixture: In a saucepan over low heat, combine the peanut butter, honey or maple syrup, cocoa powder, and salt. Stir gently until the mixture is smooth and heated through without boiling.
  2. Add vanilla and oats: Remove the saucepan from heat, then add the vanilla extract. Stir in the rolled oats until they are completely coated with the chocolate peanut butter mixture.
  3. Press oat mixture into pan: Transfer the combined oat mixture into a lined 9×9 inch pan. Use a spatula or your hands to firmly and evenly pack the mixture to create a solid base layer.
  4. Make chocolate topping: In a small saucepan or microwave-safe bowl, melt the chocolate chips with the unsalted butter and optional tablespoon of peanut butter over low heat or in short bursts in the microwave, stirring until smooth.
  5. Spread topping: Evenly spread the melted chocolate mixture over the pressed oat base, creating a smooth, even chocolate layer on top.
  6. Chill and set: Place the pan in the refrigerator for at least 1 hour to allow the bars to firm up. Once set, cut into 16 bars and serve.

  • Use parchment paper to line the pan for easier removal of bars.
