- Chill the mixture: Place the mixture in the refrigerator to chill for 1 hour until firm, or alternatively, freeze for 20–30 minutes for faster setting. Once firm, scoop tablespoon-sized portions and roll them into smooth balls. Return the balls to the refrigerator to chill again for 20 minutes to firm up before dipping.
- Melt the chocolate: Gently melt the semi-sweet or dark chocolate along with the optional coconut oil or shortening, which helps to create a smoother and shinier coating. Use a double boiler or microwave in short bursts, stirring frequently to avoid burning.
