Description

Moo Shu Chicken is a flavorful and easy-to-make Chinese-American stir-fry dish featuring tender chicken, crisp vegetables, scrambled eggs, and a savory sauce, all wrapped in Mandarin pancakes or tortillas for a fun and satisfying meal.

Ingredients

Scale

Chicken and Sauce

  • 1 pound boneless skinless chicken breasts, thinly sliced
  • 2 tablespoons soy sauce
  • 1 tablespoon hoisin sauce
  • 1 tablespoon oyster sauce
  • 1 tablespoon rice vinegar
  • 2 teaspoons sesame oil
  • 1 tablespoon vegetable oil

Vegetables and Eggs

  • 2 cloves garlic, minced
  • 1 tablespoon fresh ginger, minced
  • 2 cups shredded green cabbage
  • 1 cup shredded carrots
  • 1 cup shiitake or button mushrooms, thinly sliced
  • 3 green onions, sliced
  • 2 large eggs, lightly beaten

Serving

  • 8 Mandarin pancakes or flour tortillas
  • Extra hoisin sauce for serving

Instructions

  1. Prepare the sauce: In a small bowl, combine the soy sauce, hoisin sauce, oyster sauce, rice vinegar, and sesame oil. Set this mixture aside for later use.
  2. Cook the chicken: Heat the vegetable oil in a large skillet or wok over medium-high heat. Add the thinly sliced chicken breasts and cook for 5 to 6 minutes until the chicken is lightly browned and cooked through. Remove the chicken from the pan and set aside.
  3. Sauté aromatics: Using the same pan, add the minced garlic and fresh ginger. Cook for about 30 seconds, stirring constantly, until the mixture becomes fragrant.
  4. Cook the vegetables: Add the shredded cabbage, carrots, and sliced mushrooms to the pan. Stir-fry the vegetables for 4 to 5 minutes until they are tender but still crisp.
  5. Scramble the eggs: Push the cooked vegetables to one side of the pan. Pour the lightly beaten eggs into the empty side and scramble until fully cooked. Then, mix the scrambled eggs into the vegetables thoroughly.
  6. Combine chicken and sauce: Return the cooked chicken to the pan with the vegetables and eggs. Pour in the prepared sauce and toss everything together, cooking for an additional 2 to 3 minutes to heat through and ensure all ingredients are well coated with the sauce.
  7. Warm the pancakes or tortillas: Heat the Mandarin pancakes or flour tortillas according to the package instructions until they are soft and pliable.
  8. Assemble and serve: Spread a small amount of hoisin sauce on each warmed pancake or tortilla. Add a generous scoop of the Moo Shu chicken mixture on top, then roll it up like a burrito. Serve immediately for the best taste and texture.

Notes

  • You can substitute chicken with tofu, pork, or shrimp to vary the protein.
  • Mandarin pancakes are traditional, but flour tortillas are a convenient alternative that works well.
  • For extra heat, drizzle chili garlic sauce over the filling before wrapping.
