Ingredients
Scale
Beef and Filling
- 1 pound beef tenderloin, cut into small cubes
- 1 cup finely chopped cremini or button mushrooms
- 2 tablespoons finely chopped shallots
- 2 cloves garlic, minced
- 1 tablespoon fresh thyme or 1 teaspoon dried thyme
- Salt, to taste
- Black pepper, to taste
- 1 tablespoon olive oil
- 1 tablespoon Dijon mustard (optional)
Puff Pastry and Finish
- 1 package puff pastry, thawed
- Flour, for dusting
- 1 egg, beaten
Instructions
- Prepare and Sear Beef: Heat olive oil in a skillet over medium-high heat. Season beef cubes with salt and black pepper, then sear for 2 to 3 minutes on each side until browned. Remove from the skillet and allow to cool.
- Make Mushroom Duxelles: In the same skillet, sauté mushrooms, shallots, and garlic until mushrooms are golden brown, about 5 to 7 minutes. Stir in thyme, season with salt and black pepper, then transfer mixture to a plate to cool.
- Prepare Puff Pastry: On a lightly floured surface, roll puff pastry sheets to approximately 1/8 inch thickness. Cut into 3 by 3 inch squares.
- Assemble Bites: On each pastry square, place a small portion of mushroom duxelles, spread Dijon mustard if using, and top with a beef cube. Fold the pastry over and seal the edges securely with a fork.
- Bake Mini Wellingtons: Preheat oven to 400°F (205°C). Arrange assembled bites on a baking sheet lined with parchment paper. Brush tops with beaten egg and bake for 15 to 20 minutes until pastry is golden brown.
- Serve: Remove from oven and allow to cool slightly. Serve warm for optimal flavor and texture.
Notes
- Ensure beef cubes are uniform in size for even cooking.
- Use puff pastry sheets fresh from thawing and keep them cool to prevent tearing.
- Dijon mustard adds a slight tang; omit if preferred.
- The bites can be prepared ahead and baked just before serving for convenience.
- Serve with a dipping sauce like horseradish cream or mustard sauce for extra flavor.
