Ingredients
Scale
Filling
- 1 cup fresh spinach, chopped
- 1/2 cup shredded mozzarella cheese
- 1/2 cup crumbled feta cheese
- 1 small tomato, diced
- 1/4 cup red onion, thinly sliced
- 1/4 teaspoon black pepper
Other
- 4 flour tortillas
- 1 tablespoon olive oil (for frying)
Instructions
- Prepare the Filling: In a mixing bowl, combine the shredded mozzarella, crumbled feta, chopped spinach, diced tomato, thinly sliced red onion, and black pepper. Stir thoroughly until all ingredients are evenly mixed.
- Assemble the Quesadillas: Lay one flour tortilla flat on a clean surface. Spoon about one-fourth of the filling mixture onto half of the tortilla, spreading it evenly.
- Fold the Tortilla: Carefully fold the tortilla over the filling to create a half-moon shape, sealing in the mixture.
- Heat the Skillet: Place a large skillet or griddle over medium heat and add the olive oil. Allow the oil to heat up until shimmering but not smoking.
- Cook the Quesadillas: Place the filled tortilla in the skillet. Cook for 3-4 minutes on each side, pressing gently with a spatula to ensure the cheese melts evenly and the tortilla turns golden brown and crisp.
- Serve: Remove the quesadilla from the skillet and let it cool slightly. Slice into wedges and serve warm.
Notes
- You can substitute whole wheat tortillas for a healthier option.
- To add more flavor, sprinkle some dried oregano or crushed red pepper flakes into the filling.
- Use a non-stick skillet to reduce the amount of olive oil needed.
- Leftover quesadillas can be reheated in a skillet or oven to maintain crispiness.
