- 1 small onion, diced

- 8 oz sliced mushrooms

- 2 cups beef broth
- 1 tablespoon Worcestershire sauce
- 1 teaspoon Dijon mustard
- 3/4 cup sour cream
- 8 oz egg noodles, cooked
- Chopped parsley for garnish
Instructions
- Prepare Meatball Mixture: In a large bowl, combine ground beef, breadcrumbs, egg, Parmesan cheese, garlic powder, onion powder, salt, and pepper. Mix well and roll the mixture into 1-inch meatballs.
- Brown Meatballs: Heat olive oil in a large skillet over medium heat. Add meatballs in batches and brown on all sides, about 5–6 minutes. They do not need to be fully cooked through at this stage. Remove browned meatballs and set aside.
- Sauté Vegetables: In the same skillet, add diced onion and sliced mushrooms. Cook for 5–6 minutes until the vegetables are softened and golden. Add minced garlic and cook for an additional 30 seconds until fragrant.
- Make Sauce Base: Sprinkle flour over the sautéed vegetables and stir continuously for 1 minute to cook off the raw flour taste, ensuring a smooth sauce.
- Add Liquids and Simmer: Gradually pour in beef broth while stirring, then add Worcestershire sauce and Dijon mustard. Bring the mixture to a gentle simmer.
- Cook Meatballs in Sauce: Return the meatballs to the skillet, cover, and cook for 10-12 minutes until the meatballs are fully cooked and the sauce thickens slightly.
- Finish with Sour Cream: Remove from heat and stir in sour cream until the sauce is smooth and creamy. Season with additional salt and pepper if needed.
- Serve: Spoon meatballs and sauce over cooked egg noodles. Garnish with chopped fresh parsley and serve warm.
