For the Maple Glaze and Salmon:

  • 4 salmon fillets (about 6 ounces each)
  • 1/4 cup pure maple syrup
  • 2 tablespoons Dijon mustard
  • 1 tablespoon soy sauce
  • 1 tablespoon olive oil
  • 1 garlic clove, minced
  • 1/2 teaspoon smoked paprika
  • Salt and black pepper, to taste

For the Vegetables:

  • 1 pound baby potatoes, halved
  • 1/2 pound green beans, trimmed
  • 1 tablespoon olive oil
  • Salt and pepper, to taste


Instructions

  1. Preheat the oven: Set your oven to 400°F (200°C) and line a large sheet pan with parchment paper to prevent sticking.
  2. Prepare the maple glaze: In a small bowl, whisk together maple syrup, Dijon mustard, soy sauce, olive oil, minced garlic, smoked paprika, salt, and pepper until well combined.
  3. Arrange salmon and potatoes: Place the salmon fillets on one side of the prepared sheet pan and brush them generously with the maple glaze. In a separate bowl, toss the halved baby potatoes with half of the olive oil, salt, and pepper, then spread them on the opposite side of the sheet pan.
  4. Roast potatoes and salmon: Roast the salmon and potatoes for 15 minutes in the preheated oven.
  5. Add green beans: Remove the pan from the oven and toss the green beans with the remaining olive oil, salt, and pepper. Spread them on the sheet pan alongside the potatoes and salmon.
  6. Glaze and continue roasting: Brush more maple glaze over the salmon fillets if desired, then return the sheet pan to the oven. Roast for an additional 10–12 minutes, or until the salmon is cooked through and flakes easily with a fork.
  7. Serve: Remove from oven and serve immediately, enjoying the flavorful salmon with perfectly roasted potatoes and tender green beans.
