- 1/4 cup cooked bacon (crumbled)

- Salt and pepper to taste
- 1 large egg
- 1/2 cup breadcrumbs (plus more for coating)
- 1/4 cup all-purpose flour
- Oil for frying or cooking spray for baking
Instructions
- Mix the base ingredients: In a large bowl, combine cold mashed potatoes, shredded cheddar cheese, crumbled bacon, chopped green onions, garlic powder, salt, and pepper. Stir these ingredients well to distribute the flavors evenly.
- Bind the mixture: Add the egg, all-purpose flour, and 1/2 cup of breadcrumbs to the potato mixture. Mix thoroughly until the consistency is thick and can hold its shape without falling apart.
- Form the bites: Scoop about 1 tablespoon of the mixture and roll it into small balls using your hands. For extra crunch, roll each ball in additional breadcrumbs.
- Fry the bites (optional): Heat oil in a skillet over medium heat. Fry the bites in batches for 2–3 minutes per side or until golden brown and crispy on all sides. Remove and drain on paper towels.
- Bake the bites (optional): Preheat oven to 400°F (200°C). Place the bites on a parchment-lined baking sheet and spray lightly with cooking spray. Bake for 18–20 minutes, flipping halfway through, until golden and crispy.
- Serve: Serve the loaded mashed potato bites warm with sour cream or your favorite dipping sauce.
