Instructions
- Prep the Marinade: In a small bowl, mix lemon zest, lemon juice, olive oil, Dijon mustard, grated garlic, salt, and pepper until well combined. Coat the salmon fillets thoroughly with the marinade. For best flavor, let the salmon marinate for 5 minutes or up to 1 hour if time allows.
- Preheat Broiler: Position the oven rack about 8 inches from the broiler element. Preheat the broiler to 525°F (approximately 5 minutes) to ensure it reaches the proper temperature for cooking.
- Prepare Vegetables: Toss trimmed asparagus and cherry tomatoes with a bit of olive oil and season lightly with salt and pepper. Arrange the vegetables in a single layer on a broiler-safe baking tray, placing the marinated salmon fillets alongside.
