Description

This Lemon Baked Salmon recipe features tender salmon fillets marinated in a zesty lemon and garlic mixture, broiled to perfection alongside asparagus and cherry tomatoes for a fresh, healthy, and flavorful meal ready in just 16 minutes.

Ingredients

Scale

Salmon Marinade

  • 4 pieces salmon fillets (6 oz each), skin optional
  • 1 tsp lemon zest
  • 1 tbsp lemon juice
  • 2 tbsp olive oil
  • 1 tsp Dijon mustard
  • 2 cloves garlic, grated
  • 1/2 tsp salt
  • 1/4 tsp pepper

Vegetables

  • 3 bunches asparagus, trimmed
  • 200g cherry tomatoes

Garnish

  • Grated Parmesan cheese
  • Chopped fresh parsley
  • Fresh lemon wedges

Instructions

  1. Prep: In a small bowl, mix together lemon zest, lemon juice, olive oil, Dijon mustard, grated garlic, salt, and pepper to create the marinade. Coat the salmon fillets evenly with this mixture. If time allows, let the salmon marinate for 5 minutes up to an hour to deepen the flavors.
  2. Setup: Preheat your oven’s broiler to 525°F, positioning the oven rack about 8 inches from the heat source. Allow the broiler to preheat for approximately 5 minutes to reach the optimal temperature.
  3. Arrange: Toss the trimmed asparagus and cherry tomatoes with a bit of olive oil, salt, and pepper for seasoning. Place the seasoned vegetables evenly on a baking tray and nestle the marinated salmon fillets alongside them.
  4. Cook: Broil the salmon and vegetables for about 11 minutes, or until the salmon flakes easily with a fork and reaches an internal temperature of 122°F for optimal tenderness and moisture.
  5. Finish: Remove the tray from the oven and immediately garnish the salmon with grated Parmesan cheese, fresh chopped parsley, and squeeze fresh lemon juice over the top. Serve with lemon wedges on the side for an added citrus burst.

Notes

  • For a crispier skin, broil salmon with skin side up.
  • Do not overcook the salmon to keep it moist and tender.
  • You can substitute asparagus and cherry tomatoes with other vegetables like green beans or bell peppers.
  • Make sure to use fresh lemon zest and juice for the best flavor.
  • Use a meat thermometer to ensure the salmon reaches the perfect internal temperature.
