Description

These Keto Cinnamon Rolls offer a low-carb, delicious alternative to traditional cinnamon rolls, perfect for those following a ketogenic diet. Made with mozzarella cheese, almond flour, and sweetened naturally with stevia, these cinnamon rolls are soft, flavorful, and easy to make in just under an hour.

Ingredients

Scale

Dough

  • 1 1/2 cups mozzarella cheese
  • 2 tablespoons cream cheese
  • 3/4 cup almond flour
  • 1 egg white
  • 1/2 teaspoon baking powder

Filling

  • 1 teaspoon vanilla extract
  • 1 teaspoon liquid stevia
  • 1 teaspoon ground cinnamon

Instructions

  1. Preheat the oven: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper to prevent sticking and make cleanup easier.
  2. Melt the cheeses: Combine mozzarella cheese and cream cheese in a microwave-safe bowl or use the stovetop to melt them together. Stir continuously until the mixture is fully melted and smooth.
  3. Make the dough: To the melted cheese mixture, add almond flour, baking powder, and egg white. Mix thoroughly until a cohesive dough forms that can be handled easily.
  4. Roll out the dough: Place the dough between two sheets of parchment paper and roll it out evenly until about 1/4 inch thick, forming a rectangular shape.
  5. Prepare cinnamon filling: In a small bowl, stir together the liquid stevia, vanilla extract, and ground cinnamon until well blended.
  6. Apply filling and roll: Brush the cinnamon mixture evenly over the rolled dough. Carefully roll the dough up tightly into a log shape along the longer edge.
  7. Slice the rolls: Using a sharp knife, cut the rolled log into 6 equal pieces. Place each slice spaced apart on the prepared baking sheet.
  8. Bake: Place the baking sheet in the preheated oven and bake for 35 minutes or until the rolls are golden brown on top.
  9. Cool and serve: Allow the cinnamon rolls to cool for a few minutes before serving so they set and are easier to handle.

Notes

  • For best results, use fresh mozzarella cheese for melting.
  • Be gentle when rolling the dough to avoid tearing.
  • These cinnamon rolls can be stored in an airtight container in the refrigerator for up to 3 days.
  • Reheat gently in the oven or microwave before serving to restore softness.
  • Adjust sweetness to taste by adding more or less liquid stevia.
